Besso flour (በሶ ዱቄት)
Finely ground flour made from husked, roasted barley mixed with spices like cardamom, hell, and cinnamon, eaten as drink (juice) or dough (chibito).
Bulla (ቡላ)
A premium nutrient-dense starchy product obtained by scraping and squeezing the internal succulent pulp of the false banana (Enset) pseudostem.
Enjera (እንጀራ)
The national flatbread of Ethiopia, fermented for 3-4 days to produce a sour taste and aerated honeycomb bubbly surface (Ayn).
Enset (እንሰት)
Ensete ventricosum, known as the "tree against hunger"—a drought-resistant staple across South & South-Western Ethiopia that produces Kocho and Bulla.
Ersho (እርሾ)
Active starter dough preserved from a previous fermentation batch, containing natural wild yeasts and lactic acid bacteria.
Keye wot (ቀይ ወጥ)
Traditional rich red stew prepared with generous amounts of caramelized onions, berbere spice powder, garlic, and spiced butter or oil.
Kocho (ቆጮ)
Traditional fermented food prepared from scraped Enset leaf sheaths and pulverized corms, buried underground to ferment.
Metad (ምጣድ)
Large round griddle made from polished clay (or modern electric coil) with a dome lid (Akambalo), specifically crafted for baking Injera.
Sefede (ሰፌድ)
Traditional wide plate handwoven from natural dried grass, used for winnowing grains and aerating freshly lifted Injera.
Sintar (ስንጣር)
Traditional one-fingered fork hand-carved from aromatic plant wood, used in the Tigray region for eating authentic meat delicacies.
Taba (ጣባ)
Handcrafted earthenware clay bowl or shallow dish used to serve piping-hot Kitfo, Gomen, and freshly churned Ayib.
Tej (ጠጅ)
Noble Ethiopian honey wine fermented with water and dried leaves/twigs of Gesho (Rhamnus prinoides) as the bittering agent.
