Step 1 : Begin by adding the diced onions into a pot and stir it till it chnages color to light brown then add the oil wait little time then add garlic and berbere.
Step 2 : Cook it for 2-3 mins and add the tomato paste stir it
Step 3 : Cook it for 3-5 mins and add the the water into the mixture and let it boil
Step 4 : Once the water is boiled add the chickpeas flour (shiro) in smaller portion while stirring it continuously.
Step 5 : Stir it until shiro spread is at desired consistency.
Step 6 : Finally, add niter kibbeh and salt stir for a bit, then remove from heat.
Step 7 : Add the sliced pepper on top Serve your Shiro hot with injera and enjoy
If you prefer, you can substitute the vegetable oil with 2 tbsp of Niter Kibbeh (Ethiopian clarified butter)
