Step 1 : Begin by adding the diced onions in a large saucepan over medium-high heat. Cook, covered, until starting to brown, about 5 minutes. Add vegetable oil and garlic paste; cook until fragrant, about 5 minutes. Stir in tomatoes; cook until softened, 5 to 7 minutes.
Step 2 : When it start to get heated add the berbere and simeer for 10 minutes while adding small amounts of water
Step 3 : Then when it gets heated add the remaining water and let it boil for 10-20 minutes
Step 4 : Add niter kibbeh and salt stir for a bit, then remove from heat.
Step 5 : Finally, add the injra and combine it and add the sliced pepper on top and Serve, Enjoy!
The amount of water you need will vary depending on how much injera you use . Less Injera - Less water
